This is one of our preferict recipe for winter time. In this period, we used to prepare many preparations with radicchio, like radicchio with grilled salame o radicchio and pumpking sauce.

Ingredients for 4 persons:
200 g radicchio leaves clean
1 chopped shallot
2 Tablespoons extra virgin olive oil
50 g of almonds

preparation:
The leaves of the radicchio can be left ten minutes to soak in cold water to soften them and make them a little less love.
Bring a pan of water to the boil and blanch the almonds for a few minutes. Drain and set aside to cool, then pinch off the skins.
Toast the almonds in a dry frying pan over medium–high heat. Keep them moving to prevent burning; they should be a light golden colour.
The chopped shallot and radicchio have to be softly cooked with olive oil. Season with the salt and pepper.
In a food processor, put the almonds with radicchio and pulse until you desire.
If necessary, add a few tablespoons of boiled water to soften it. The pesto is ready to be used for about 320 g pasta.
